This lot is a 2011/12 crop and was vacuum-packed at origin. It is certified Organic by Ceres, GmbH, an USDA agent. Victor and his wife Aleja have four young daughters (Yola, Sonia, Marisol & Magali). They started growing coffee in 2002. As is the norm in San Ignacio, their farm is 10 hectares (about 22 acres) big, four hectares of which are dedicated to coffee production. They grow the Typica coffee varietal. Their farm is located at 5,300 feet above sea level (ideal for good, high altiude Arabica coffee beans). Victor and Aleja worked as laborers on "cafetales" (coffee farms) in San Ignacio for five years before purchasing their own cafetal and moving here for good. In those times, the town belonged to a different co-operative that was corrupt and did not benefit the farmers. Today, both Victor and Aleja each own a cafetal and they are extremely content to be working together with Invalsa. They are a happy bunch-their laughter carries through the trees on their beautiful cafetal that it tucked away on the lower ridge of a mountain just outside San Ignacio. With four young daughters they always have their eyes on the future, and look forward to being able to pass their lots on to the next generation in time. Our head cupper scored this microlot with a score of 88. Cupping comments are as follows: Live acidity, very consistent, chocolate, good balance.
